AIP BBQ Chicken & Vegetable Skewers

Easy to whip up! One the whole family will enjoy! If you think chicken sticks are dry and tasteless, then you need to give these a try! The spices on the chicken and veggies is tantalizing – add you favorite AIP sauces as you wish.
Mix & match, add bacon, seared pineapple or even red onion – Perfect with Corn on the cob or a Side salad!

Ingredients
  

  • 1 Zucchini sliced into rounds
  • 1 Onion cut into wedges
  • 1 cup Mushrooms halved
  • 500 grams Chicken thighs cut into bite-sized pieces
  • 2 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Chop Vegetables & Chicken into bite-sized pieces. Then in a small bowl, whisk together olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
  • Place vegetables and chicken in a large bowl. Pour the marinade over the vegetables and chicken, tossing until well-coated. Allow them to marinate for at least 10 minutes.
  • Thread the marinated vegetables and chicken onto the skewers
  • Preheat the BBQ or fry pan. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  • Remove the skewers from the heat and place them on a serving platter.
    Garnish with fresh chopped parsley. Serve warm and enjoy!

Notes

  • Tip: To reduce the skewers form burning/charring in the BBQ
    – Soak skewer sticks for about 5 mins in water, this stops the breakage of skewers while eating.
