Ingredients
  

  • 2 cup Mashed sweet potato
  • 2 Ripe Bananas
  • ¼ cup Coconut milk
  • 2 tbsp Coconut oil
  • 1 tsp Cinnamon
  • ¼ tsp Ground ginger
  • ¼ tsp Ground cloves
  • ¼ tsp Sea salt
  • ½ tsp Baking soda
  • Optional Toppings like sliced fruit, coconut flakes, or a drizzle of honey (if tolerated)

Instructions
 

  • Preheat your oven to 180°C.
  • In a blender or food processor, combine the mashed sweet potato or plantains, ripe bananas, coconut milk, coconut oil, cinnamon, ground ginger, ground cloves, sea salt, and baking soda. Blend until you have a smooth batter.
  • Grease a baking dish with coconut oil or line it with parchment paper to prevent sticking.
    Pour the batter into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the center is set. The exact baking time may vary depending on your oven, so keep an eye on it.
    Once the baked sweet potato mixture is done, let it cool for a few minutes.
  • Top with your choice of AIP-friendly toppings like sliced fruit, coconut flakes, or a drizzle of honey if you can tolerate it.
    Serve and enjoy!

  • Sweetness: This recipe relies on the natural sweetness of bananas and sweet potatoes or plantains. You can adjust the sweetness by adding more or fewer ripe bananas, or by adding a little honey (if tolerated) to the batter.
