Ingredients
  

  • 1 cup Kale cut into 1/4 inch strips
  • 2 Ripe Avocados, diced
  • ½ cup Pomegranate seeds
  • ½ cup Cucumber, chopped
  • 1 ½ tbsp Fresh mint, finely chopped

Dressing

  • juice of 1 lemon
  • 2 clove Garlic, pressed
  • 1 tbsp Avocado Oil
  • ½ tsp Pink Himalayan salt or Celtic Sea Salt
  • 1 tsp Honey (or maple syrup for vegan friendly)

Instructions
 

  • Chop all ingredients accordingly. Whisk dressing ingredients together, set aside.
  • Add all other ingredients to a large bowl.
  • Pour dressing over and toss. Enjoy!
