  • ½ cup Cassava flour
  • ¼ cup Coconut flour
  • ¼ cup Carob powder
  • ¼ cup Coconut oil, melted
  • ¼ cup Maple syrup
  • ¼ tsp Peppermint extract
  • Pinch of salt


  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the cassava flour, coconut flour, carob powder, and a pinch of salt.
  • Add the melted coconut oil, maple syrup, and peppermint extract to the dry ingredients. Mix until a dough forms.
  • Roll out the dough between two sheets of parchment paper to about 1/4 inch thick. Use a cookie cutter to cut out shapes and place them on the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are slightly golden.
