Ingredients
  

Dressing

  • cup Fresh strawberries chopped
  • 2 tbsp EVOO (extra-virgin olive oil)
  • 1 ½ tbsp ACV (or balsamic vinegar, if suitable)
  • ¼ tsp Sea Salt
  • ½ tsp Raw honey or, Maple syrup (AIP-friendly sweetener)

Salad

  • 1 ½ cup Leeks Sliced
  • 1 tbsp EVOO
  • ¼ tsp Sea Salt
  • 2 cup Mixed leafy greens Spinach, kale, arugula
  • 1 cup Fresh Strawberries Quatered

Instructions
 

  • In a blender or food processor, combine the chopped strawberries, extra virgin olive oil, apple cider vinegar, sea salt, and honey. Blend until you have a smooth vinaigrette. Set aside.
  • In a saucepan over medium-low heat, add the sliced leeks, olive oil, sea salt, and a touch of honey for caramelization (use a small amount to stay AIP-compliant). Stir and cook the leeks until they become brown and caramelized, but not burnt. This may take some time, so be patient. Once done, let them cool to room temperature.
  • On each plate, arrange the mixed greens, quartered fresh strawberries, and caramelized leeks.
  • Just before serving, drizzle the strawberry balsamic vinaigrette over the salad. Avoid tossing too much as salad greens will wilt.
