For the Crust:

  • cups Coconut flour
  • ½ cup Tapioca flour
  • ½ cup Coconut oil solid
  • 1 cup Cold water
  • ½ tsp Sea salt

For the Filling:

  • 2 cups Mixed berries (blueberries, strawberries, raspberries)
  • 1 tbsp Arrowroot powder
  • 1-2 tbsp Honey or Maple Syrup (depending on your sweetness)
  • 1 tbsp Lemon Juice
  • [Garnish] Mint leaves (optional)


Prepare The Crust: Refrigerate

  • a. In a large mixing bowl, combine coconut flour, tapioca flour, and sea salt.
    b. Add solid coconut oil to the flour mixture and blend using a pastry cutter or fork until it resembles coarse crumbs.
    c. Slowly add cold water, mixing until a dough forms. If needed, add a little more water to achieve the right consistency.
    d. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.


  • Preheat your oven to 375°F (190°C).
    In a mixing bowl, combine mixed berries, honey or maple syrup (if using), arrowroot powder, and lemon juice. Toss gently to coat the berries evenly.
  • Divide the chilled dough into four equal portions. Roll out each portion between two sheets of parchment paper to form 6-7 inch circles.
  • Place the rolled-out dough circles on a baking sheet lined with parchment paper. Arrange the mixed berry filling in the center of each dough circle, leaving a border around the edges. Fold the edges of the dough over the berries, creating a rustic, galette-like shape.
  • Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the crust is golden and the berries are bubbly.
  • Allow the galettes to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Garnish with fresh mint leaves, if desired, before serving.


  • Make sure your coconut oil is solid when incorporating it into the crust for the best texture.
  • Feel free to adjust the sweetness of the filling by adding more or less honey or maple syrup based on your taste preferences.
  • These galettes can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat briefly in the oven before serving for a warm, delightful treat.
