  • 1 bottle balsamic vinegar (doesn't need to be pricey)
  • Twig of thyme
  • 3 peppercorns


  • Place all ingredients into 1 litre pot. On medium heat reduce vinegar mix by ¾ volume. Finished product should coat a spoon like warm treacle. Cool and pour into sealable bottle. This is a great basic dressing for just about any green leaf salad.
