Beef Tataki With Ponzu Sauce

A delicious beef recipe inspired by the Japanese tataki preparation, where meat is seared and quickly cooled to halt the cooking process.

  • Grass fed sirloin steak 300g approx.
  • 2 cm cube beef fat, trimmed off steak if you can
  • 1 lemon
  • ½ large daikon or 2 radishes
  • 1 piece of wasabi or 1 tsp wasabi paste
  • Ponzu sauce – see dressings and vinaigrettes section


  • Finely grate the daikon/radish and place in bowl to rest for ten minutes. Season steak well and heat heavy fry pan until smoking hot. Rub with a little wagyu fat and cook steak to medium rare, and rest for five minutes in a warm place.
  • Drain excess liquid from daikon/radish by squeezing and place on serving plate with a squeeze of lemon juice over the top. Slice beef and place on plate with daikon or radish, wasabi and small ramekin of ponzu sauce.
