Ingredients
  

  • ¼ cup sunflower seeds, pecans, almonds, pepitas, prunes and organic apricots
  • 1 tbsp psyllium husks
  • 2 tsp sesame seeds
  • 150 g coconut oil, organic cold pressed
  • ¼ cup honey
  • ¼ cup coconut sugar
  • ½ cup ghee

Instructions
 

  • Activate nuts by soaking in salted water for 8 hours, pat dry.
  • Preheat oven to 200°C. Line a rectangle tray with baking paper.
  • Blend together the fruits, nuts and seeds (except sesame seeds), in a food processor. Blitz until roughly chopped.
  • Combine coconut, psyllium husks and sesame seeds. Place on the tray and lightly toast in a hot oven for approx. 5 minutes until lightly brown. Remove mixture from tray (to prevent further cooking). Place fruit, nuts, seeds mixture into a bowl.
  • In a saucepan place, ghee, honey and sugar over a low heat and cook for approx. 5 minutes. Pour wet mixture (butter, honey and sugar) into the dry mixture and stir thoroughly.
  • Press firmly into the lined baking tray and cool. Cut and serve.
