Braised Fennel
Beautiful braised fennel which makes for an inviting side dish. This vegetarian recipe is a simple but oh-so-yummy dish.

Ingredients
- 6 head of fennel
- 4 tbsp olive oil
- 2 garlic cloves
- 250 g tomatoes skinned, de-seeded and chopped
- salt and pepper
Instructions
- Cut the fennel bulbs in half lengthways. Place the oil and garlic in a heavy bottomed frying pan with lid. Season the fennel and place ,cut side down, in the pan .Cook ,covered, over a gentle heat for 30 minutes, turning occasionally.
- Add the tomatoes and season. Cover and cook for another 30minsat the lowest heat , until the fennel is tender. If there is too much liquid, boil uncovered for a few minutes until the sauce has almost completely evaporated.
