Butterflied BBQ Leg of Lamb

This leg of lamb is butterflied for easy grilling and marinated to give it great flavor.

  • 1 ½ kg easy carve ½ leg of lamb
  • 6 tbsp coconut oil
  • 3 sprigs of mint
  • ¼ cup rice wine vinegar
  • salt and pepper


  • Remove bone from ½ leg of lamb and trim away fat.
  • Chop mint and mix with oil and vinegar. Place lamb in shallow tray and cover with mint marinade. Rub in thoroughly and season.
  • Chill for 12 hours and cook on BBQ till medium rare. Serve with salads or hot vegetable sides.
