Ingredients
  

  • 3 eggs tempered to room temperature
  • ½ cup honey
  • 3 tbsp coconut oil melted
  • ¼ cup pureed apple (as in cupcake recipe)
  • 1 cup almond meal
  • ¼ cup raw cacao powder
  • ½ tsp baking powder
  • 1 cup zucchini grated
  • 1 cup carrot grated

Instructions
 

  • Preheat oven to 160 °C. In a large bowl, whisk together eggs, honey, coconut oil and applesauce. In a separate bowl, combine almond meal, cocoa powder and baking powder. Mix well.
  • Slowly add the wet ingredient to the dry ingredients, stirring constantly. Continue mixing and add the grated zucchini.
  • Pour the batter into a greased loaf pan. Bake for 50 to 60 minutes.
