This chicken soup is easy to make and simply delicious whenever you want to eat something warm and comforting.

  • 1-2 large pots


  • 1 whole free range chicken
  • 2 celery sticks, washed
  • 2 carrots, washed and peeled
  • 2 spring onion bulbs (go for the green onions with more developed white bulbs) or Or, 1 brown onion, cut into quarters
  • 3-4 bay leaves
  • A few coriander stems and some leaves
  • 2 garlic cloves, peeled and cut in half
  • 1 tsp whole black peppercorns
  • 2 litres cold water
  • 2 medium white potatoes, peeled and cut into small cubes
  • 2 tsp Celtic salt or sea salt


  • Cut whole chicken into 4 pieces. Place in pot, cover with 2 liters of water, and bring to a boil. Add bay leaves, garlic, peppercorns, celery, carrot, onion, and coriander stems.
  • Simmer covered for 1 hour 30 minutes.Prepare remaining vegetables. Peel and cube potato, slice celery and carrot, wash coriander leaves. Remove chicken, let cool, strain liquid into another pot.
  • Discard cooked veggies, add salt, potato, celery, and carrot to strained stock. Simmer for 10-15 minutes. Remove chicken skin, shred meat into strips, and return to soup. Turn off heat, add coriander leaves and diced green onion. Cover and let sit before serving.


  • White Potatoes: Are not typically considered AIP-friendly due to their nightshade classification. Some people on the AIP diet choose to reintroduce them later in their healing journey, but they are initially avoided.
  • SWAP for Sweet Potatoes: Sweet potatoes are a popular and nutritious alternative to white potatoes. They can be used in a similar way and provide a sweet and satisfying flavor.
