  • 6 size seven eggs
  • 2 tbsp mayonnaise
  • ½ tsp curry powder
  • 2 tbsp chopped chives
  • salt and pepper


  • Boil eggs for 8 minutes, once cooled peel eggs and halve. Remove yolks from half eggs and mix with curry powder, mayonnaise, chives and season to taste with salt and pepper.
  • Pipe or spoon curry mix into cavity of half eggs, smooth over and chill. I love these as an afternoon snack.


Other snacks that work well when you are on the go can be as simple as a piece of fresh organic fruit or a boiled egg. The trick is to mix it up a bit.
