Easy Chocolate Avocado Truffles

Basically, reactive foods can be some or all of the following; grains, nightshades, nuts, seeds, dairy, and eggs. This easy no bake recipe is the perfect way to have a chocolate kick without the side effects of shop bought treats. Enjoy!!!

Easy Chocolate Avocado Truffles

Ingredients
  

  • 1 avocado ripe and large
  • cup coconut butter
  • cup cocoa powder or carob powder if AIP
  • 3 tbsp maple syrup or equivalent stevia or xylitol

Topping – choose 1

  • ¼ cup pumpkin seed crushed (not AIP)
  • ¼ cup dessicated coconut
  • cup cocao powder or carob if AIP

Instructions
 

  • Place all ingredients in a food processor.
  • Process until well mixed.
  • Place in a bowl in the refrigerator until fairly firm (approx. 40 min), or alternatively use the freezer for 10-20 minutes.
  • Using a small cookie scoop or melon baller, scoop out balls of the avocado mixture and roll into balls.
  • Roll the balls into desired topping.
  • Refrigerate or freeze any remaining truffles for later.
