Eggplant Toad In The Hole

Toad in a Hole Eggplant Style is the Paleo take on the childhood classic 'Toad in a Hole'.

  • 1 large eggplant
  • ground rock salt
  • salt and pepper for seasoning
  • coconut oil
  • 4 medium sized eggs
  • ¼ cup chopped spring onions


  • Slice eggplant lengthways into 1 cm slices, sprinkle salt over both sides and leave for 15 minutes. Wash and pat dry to remove excess salt after 15 minutes.
  • Preheat heavy skillet and fry eggplant until soft, cut 5 cm hole in eggplant slices and drop in an egg into each hole. Fry until cooked and flip to finish to your liking.
  • Serve and garnish with spring onions.
