  • Food Processor


  • 1 clove of garlic
  • 500 g fresh salmon, skin removed and roughly chopped
  • 1 red onion diced
  • ¼ cup coconut flour
  • 1 egg
  • 1 cup coriander
  • 1 mango diced
  • ¼ cup lime juice


  • Blend garlic, salmon and half the onion in food processor until coarsely minced. Add coconut flour, egg and mix. Divide into 10 small balls and make into patties, rest for 30 minutes.
  • For mango salsa mix diced mango, coriander, onion and lime juice in a bowl.
  • Preheat pan with a little coconut oil to medium heat and cook the patties for 3 to 4 minutes or until they are slightly pink inside. Serve immediately with spoon of salsa on top. Goes well with a little fresh rocket or salad greens.
