  • Slow Cooker

  • 500 g beef mince can be made with chicken or veal as well
  • 3 tbsp avocado oil
  • 2 cups beef broth
  • 2 zucchinis spiralized to form noodles

Basil Pesto

  • ¼ cup olive oil extra virgin
  • 3 cloves garlic peeled and roughly chopped
  • 1 cup fresh basil leaves
  • ½ cup flat leaf parsley leaves
  • 2 tsp nutritional yeast flakes
  • 1 tbsp freshly squeezed lemon juice
  • ¼ tsp Himalayan salt

  • In a bowl, mix together the ground beef and AIP Basil Pesto.  Form small meatballs from the mixture.
  • Add the avocado oil to a frying pan and brown the meatballs (in batches).
Place the meatballs into a slow cooker along with the beef broth. Cover and cook for 4 hours on medium, spooning the broth over the meatballs every now and then.
  • To cook the zucchini noodles, take a little broth (approx. 1/4 cup (60 ml)) from the crockpot and place into a large pan over high heat. Add the zucchini noodles and toss well to coat, cooking the zucchini until all the moisture in the pan has evaporated and the zucchini has cooked through (this won’t take longer than a minute or two.)
  • Season the zucchini with salt and serve topped with the meatballs. Garnish with torn basil leaves.

Basil Pesto

  • Blender all ingredients together.
  • Store in a sealed container in the fridge for no longer than 4 days.

  • Optional – Add crusty (gluten-free) bread for a side.
  • Zucchini – A great, low-carb alternative to gluten-free or traditional pasta.
