  • 4 Large eggs
  • 1 cup Prawns, peeled and deveined
  • 1 cup Rehydrated and chopped seaweed or wakame
  • ½ cup Dried cranberries
  • 2 tbsp Olive oil
  • 1 tbsp Rice vinegar
  • 1 tsp Soy sauce
  • 1 tsp Honey or maple syrup


  • Boil eggs for 8-10 minutes, then cool, peel, and cut into halves or quarters.
  • Cook prawns in olive oil for 2-3 minutes per side until pink and opaque. Set aside.
  • Whisk olive oil, rice vinegar, soy sauce, honey/maple syrup, salt, and pepper in a bowl.
  • Combine seaweed, prawns, cranberries, and eggs in a bowl. Drizzle dressing over salad, gently toss to coat.
  • Divide onto plates. Optionally, garnish with extra seaweed, cranberries, or sesame seeds. Salt and pepper to taste
