Japanese Dashi Soup with Salmon

  • 3 sachets of dashi stock (can be bought from any health food store)
  • 3 cups of hot water
  • ¼ cup chopped carrots
  • ¼ cup chopped onion
  • ¼ cup chopped celery (or any other 'hard' veggie combo you like, e.g. zucchini, cauliflower, etc.)
  • 1 cup fresh sliced shitake mushrooms (buttons will suffice)
  • 4 tsp fried shallots
  • 4 x 75g boneless skin on salmon fillets


  • Preheat fry pan to a medium heat with a little coconut oil, place fillets skin down and cook until flesh has cooked ⅔ the way through, then flip for 2 minutes. Remove from pan and place in bowl. Chop veggies and put them in saucepan with 3 cups of dashi broth. Bring to the boil then allow to simmer for 2 minutes. Strain out the vegetables into bowl over salmon.
  • Pour the flavoured broth into bowls.
  • Can be done with chicken, or other seafood if preferred.
