Lemon Date Balls

Equipment

  • Food Processor

Ingredients
  

  • 1 small Lemon Zest only
  • ½ cup Desiccated coconut
  • ½ tsp Pink Himalayan or Sea Salt
  • 1 tbsp Lemon juice
  • 2 cups Pitted dates
  • ½ tsp Ginger finely grated
  • ½ tsp Vanilla essence (low alcohol/alcohol-free)
  • 2 tbsp Coconut oil Or coconut butter for a creamier consistency

Instructions
 

  • Combine the lemon zest, desiccated coconut, pink Himalayan sea salt in a bowl or plate and put to one side.
  • Combine the rest of the ingredients in a food processor, until it is completely mixed together. If you find the mixture is a little dry, just at 1 tsp at a time until it forms a ball in the processor
  • Roll the mixture into approx. 8 balls and then roll them through the dry mix in the bowl until they are completely covered.
  • Keep in an air-tight container in the fridge.
