Ingredients
  

  • 500 grams Chicken Mince
  • 1 Cup Sweet Potato Grated
  • 1/2 Cup Baby Spinach Finely Chopped
  • 1/2 Cup Green Apple Finely diced
  • 2 rashes Bacon (Nitrate Free) Finely diced
  • 2 Tbsp Coconut Oil
  • 2 Tbsp Coconut Flour
  • 1 Tsp Sage Dried
  • 1/2 Teaspoon Himalayan Sea Salt
  • 1 Tsp Rosemary Dried

Instructions
 

  • 1. Preheat oven to 200 Celcius and line baking sheet with baking paper
  • 2. Place grated sweet potato in a clean towel, or paper towel and squeeze to remove excess fluid.
  • Using a large mixing bowl, combine all ingredients (including sweet potato) and mix well.
  • Roll mixture into meatballs around the size of a walnut, this should make around 20-25 mini meatballs. You can also shape into sausages if preferred or make larger balls (cooking time will vary).
  • Pop them on the baking sheet, bake for around 20-25 minutes, turning half way through.
  • Remove from oven when fully cooked through.
  • Serve with a green leafy salad or grilled mushrooms. You can freeze or refrigerate left overs for an easy breakfast.
