This fun-summery dish, with tangy vinaigrette, will have you coming back for more. Super simple, this salad is ready in 30 minutes and you can add your favourite protein to make this salad a bit more hearty!

  • cups Red seedless grapes
  • 2 Medium fennel bulbs, Sliced
  • 4 cups Rocket
  • 1 tsp Thyme
  • ½ tsp Sea salt
  • ¼ cup Extra virgin olive oil, Plus extra for tossing
  • 3-4 tbsp Balsamic vinegar
  • ½ tbsp Maple syrup, Optional
  • 2 tbsp Tigernuts, Sliced/Crushed, Optional


  • Pre-heat oven to 220°C. Line baking tray with baking paper.
  • Wash grapes & set aside in a medium bowl. Core and cut the fennel into ¼ inch slices. Add fennel to the bowl with grapes and toss with olive oil, thyme, and salt. Place onto baking tray & pop in the oven for 15 minutes.
  • Prepare the vinaigrette.
    Then, in a large bowl, add the arugula, roasted grapes and fennel, sliced tigernuts, (protein option, if desired), and drizzle with the dressing (add as much as you like and save the rest).


  • In a small mason jar, add the olive oil, balsamic vinegar, maple syrup, and a pinch of salt.
    Close the lid tightly and shake vigorously to mix.


  • You can use this vinaigrette on any salad – simple & easy.
  • Choose seedless grapes – so your guests don’t get a seedy surprise!
