Ingredients
  

  • 1 head of cauliflower cut into florets
  • 2 medium brown onion chopped
  • 4 garlic cloves minced
  • 2 green capsicums chopped
  • 500 g lean beef mince
  • 1 can diced tomatoes organic, drained
  • 2 tbsp jalapeño chopped
  • 2 tsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp cayenne pepper
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 cup beef broth or chicken broth

Instructions
 

CAULIFLOWER RICE

  • Place all of your cauliflower florets into your food processor and blend down until you get the texture and consistency of rice.
  • Transfer to a microwaveable safe dish and cover, DO NOT ADD WATER.
  • Microwave on high for 5 minutes, remove from microwave, add some salt, pepper, and garlic to taste and serve. Enjoy.

PALEO CHILI

  • In a saute pan, saute the onions, peppers, and garlic until they start to become soft. Next add in the ground beef and cook until brown, then drain off the excess fat.
  • Transfer the meat and vegetables to your crock pot. Add all the remaining ingredients and mix well. Cover and cook on low for 6 hours.
  • Enjoy and serve over a bed of cauliflower rice.
