A hearty egg dish that is totally packed with protein and can make a great fuel meal any time.

  • 3 eggs
  • 2 tbsp water
  • salt and pepper
  • diced capsicum, tomato, mushroom, spinach
  • 2 slices prosciutto/bacon


  • Whisk eggs and water in a bowl, preheat pan to a medium heat, lightly fry prosciutto and vegetables with a little seasoning. Remove from pan.
  • Add a little coconut oil and reheat pan, add egg mix, when half cooked add pre fried vegetables and prosciutto down the middle. Fold sides over vege mix and flip over.
  • Cook until inside egg is just cooked.
