Quinoa Salad with Citrus

A tasty and clean vegetarian recipe to support detoxification.

  • ½ cup dry lentils – rinsed, drained and cooked according to package directions
  • ½ cup dry quinoa – rinsed, drained and cooked according to package directions
  • ¼ cup red onion sliced
  • 2 mandarins peeled & segmented
  • 1 avocado diced
  • ½ cup cherry tomatoes halved
  • ¼ cup fresh parsley, mint or basil choose your favourite
  • 1/4 cup pecan nuts
  • 2 cups fresh spinach


  • 1 tbsp Dijon mustard
  • 4 tbsp Apple Cider vinegar
  • 2 tbsp olive oil extra virgin
  • 1 tbsp Lemon juice
  • ½ tsp Himalayan salt
  • Black pepper to taste


  • Mix all the vinaigrette ingredients together and set aside.
  • Mix the entire salad ingredients together, except the spinach. When ready to serve, add one big handful of spinach to individual bowls and top with lentil and quinoa mixture. Drizzle with vinaigrette.


Enjoy leftovers for lunch – to keep it fresh it is best kept all
separately and add the vinaigrette just before eating.
TIP – I like to keep used mustard jars and their lids, give them a good clean and use it to mix my vinaigrette in. Free container for your vinaigrettes and easy to transport to work!
