  • muffin baking dish


  • 1 cup coconut flour
  • ¼ cup raw cacao powder
  • ½ tsp baking soda
  • 5 eggs tempered to room temperature
  • 1 cup cooked pureed apple (2 apples peeled cored diced and poached and blended)
  • ¾ cup coconut oil melted
  • 2 tbsp vanilla extract
  • ¾ cup agave syrup (I like to add two vanilla pods to a bottle of agave syrup flavours mix fantastically)


  • Preheat oven to 180 °C. In a medium sized bowl, combine coconut flour, cacao powder and baking soda. In a separate medium sized bowl, combine eggs, pureed apples, coconut oil and vanilla/agave syrup. Mix well.
  • Slowly add wet ingredients to dry ingredients, being sure to stir constantly. Once a consistent mixture is formed, pour the batter into a well greased muffin baking dish. Bake for 20 to 25 minutes.
  • Allow the cupcakes to cool and ice if desired, using the same icing made for the Carrot Cake recipe.
