  • 1 whole chicken free range or organic, with no stuffing
  • 2 tbsp coconut oil
  • 1-2 garlic cloves crushed
  • 1 tsp Himalayan salt or sea salt
  • 2 tsp fresh rosemary leaves chopped up
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 large red onion if desired


  • Rinse chicken and make sure innards are removed.
  • Put coconut oil in bottom of crock pot and turn on low.
  • Rub in well the garlic and rosemary with desired spices directly onto chicken skin, including all the creases. Stuffing the chicken is easy with a peeled whole onion.
  • Once the coconut oil melts, put chicken in crock pot. Putting breast-down will make it cook faster, the opposite to how you see roasted chickens displayed.
  • Put lid on and cook on low for 7-8 hours or until well cooked.
  • Serve with roast vegetables with a twist and some steamed greens.
