  • ¼ firm pumpkin diced (2 cm dice)
  • 2 medium sweet potato diced (2 cm dice)
  • 1 red capsicum quartered
  • 1 yellow capsicum quartered
  • 2 medium carrots diced
  • Handful of basil leaves
  • Handful of parsley leaves
  • zest of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 bulb of garlic topped
  • salt and pepper


  • Preheat oven to 180°C
  • Toss everything together, place in deep oven tray.
  • Roast until tender and golden 45 minutes should do it, turning half way through
  • To finish chop basil, parsley and lemon zest, drizzle with olive oil. Season to taste. Serve.
