Roasted Vegetables With A Twist

- ¼ firm pumpkin diced (2 cm dice)
- 2 medium sweet potato diced (2 cm dice)
- 1 red capsicum quartered
- 1 yellow capsicum quartered
- 2 medium carrots diced
- Handful of basil leaves
- Handful of parsley leaves
- zest of 1 lemon
- 1 tbsp extra virgin olive oil
- 1 bulb of garlic topped
- salt and pepper
Instructions
- Preheat oven to 180°C
- Toss everything together, place in deep oven tray.
- Roast until tender and golden 45 minutes should do it, turning half way through
- To finish chop basil, parsley and lemon zest, drizzle with olive oil. Season to taste. Serve.
