Seafood Chowder

This seafood chowder recipe is the perfect comfort food dish for a chilly night, a seafood soup packed with a medley of calamari, prawns, cockles, and mussels.

Ingredients
  

  • 1 tbsp coconut oil
  • 1 onion, diced
  • 10 rashers of streaky bacon (thinly sliced)
  • 1 leek, diced
  • 2 stalks celery, diced
  • 1 medium sweet potato, diced into 1 cm cubes
  • 2 cloves of garlic, crushed
  • ½ litre of dashi or vegetable stock
  • ½ litre of coconut milk
  • 300 g white flesh fish
  • 150 g calamari
  • 150 g fresh prawns, peeled
  • 15 cockles
  • 15 mussels
  • 1 bay leaf
  • ¼ tsp turmeric powder or ½ tsp fresh grated turmeric
  • 2 sprigs fresh thyme
  • 1 lemon

Instructions
 

  • In a pan, melt the coconut oil and sauté the onions until they become clear. Add in the bacon and stir until it cooks thoroughly.
  • Add in the leek, celery and garlic and keep stirring.
  • Pour in the stock and add the sweet potatoes, thyme and bay leaf, cooking for about 20-30 minutes, until the sweet potatoes are soft. Remove the bay leaf and thyme, then, add in the coconut milk, chopped fish, seafood and turmeric. Cook for another 5-10 minutes.
  • Season to taste, add a squeeze of fresh lemon and top with the parsley. Serve immediately.
