Skinny Minni Mix

The Skinny Minni Mix is a great breakfast recipe that people without nut intolerances or autoimmune antibodies can enjoy.

It is also for the whole entire time of the detox, so a bit of effort at the start will save you time for the whole month!

Skinny Minni Mix

This recipe makes enough for the entire Lucy Rose Clinic 3-Week Detox program.

Equipment

  • Cooking tray
  • Large bowl

Ingredients
  

  • 500 grams Mixed raw unsalted nuts EG e Almonds, Walnuts, Macadamia, Pecan, Brazil, Cashew
  • 2 tbsp Honey or Maple syrup or Rice Malt Syrup (fructose free)
  • 2 tsp Cinnamn powder
  • 1 tbsp Vanilla Essence
  • Filtered, salty water to cover nuts during activation stage

Instructions
 

  • You will need 500g mixed nuts; you can use any nuts you tolerate well. A suggestion would be Almonds, Walnuts, Macadamia, Pecan, Brazil, or Cashew. Alternatively, you can purchase a pre-mixed selection from a supermarket.
  • Soak overnight in water with a pinch of Pink Himalayan Sea Salt in it, rinse the next morning.
  • Use a blender to crunch it all up; you still want it to be chunky, much like a granola consistency.
  • Thinly spread on baking tray – set oven to 160 degrees C.
  • Sprinkle over the top – vanilla essence,cinnamon, honey/rice malt syrup.
  • Bake for around 15 minutes, mix it around throughout this time and take out when golden brown
  • Serve with coconut cream/yogurt. Particularly popular are Coyo, Cocobella or the Nudie Coconut Yogurt (choose unflavored) in the cold section at supermarkets

Notes

Tip – Another great addition to the mix is using puffed brown rice (don’t bake with nuts, add afterward). I like to use equal parts of the nut
mix to puffed brown rice. You can purchase them from Woolies or Health food shops.
Keep refrigerated in an airtight container. It will keep fresh for up to 3-4 weeks.
