Slow-Cooked Lamb, Almond and Sweet Potato Curry

  • Slow Cooker


  • 1.2 kg lamb leg cut into cubes
  • 800 g sweet potato cubed
  • 1 lg brown onion chopped
  • 1 long red chili finely chopped
  • 2 tsp garam masala
  • 2 tsp cumin ground
  • 1 can diced tomato 400g
  • 1 can coconut milk 400g
  • 250 g spinach roughly chopped
  • 1/2 cup almond meal


  • cup roasted almond slivers
  • ½ cup coriander leaves fresh


  • Sear lamb in a hot skillet with coconut oil. This step locks the moisture in for even softer, juicier meat.
  • Combine the lamb, sweet potato, onion, garlic, chili, spices, tinned tomatoes and coconut in a 5L slow cooker.
  • Cover and cook on low for 8 hours
  • After 8 hours add in the chopped spinach and almond meal and cook in high for 5 minutes or until spinach wilts.
  • Season with salt and pepper.
  • Serve up with the 2 tablespoons of reserved coconut milk, coriander and slivered almonds.
