Steamed Asian Oysters

Oysters with ginger and spring onions is one of the most common way to prepare oysters in Chinese cuisine.

Ingredients
  

  • 1 dozen oysters
  • 1 clove of garlic finely diced
  • 2×2 cube of ginger julienned
  • 2 spring onions sliced finely and chilled in ice water
  • ¼ cup ponzu sauce
  • ¼ cup peanut oil
  • Fresh coriander leaves

Instructions
 

  • Arrange oysters in steam tray, and place a little garlic and ginger on each. Spoon ponzu sauce on each.
  • Steam for 2 minutes. Place oysters on plate. Heat peanut oil until just beginning to smoke and drizzle over oysters. Serve with spring onion curls.
