Stir Fried Asian Greens With Ginger and Ponzu Sauce

- 2 tbsp coconut oil
- ½ red capsicum sliced
- ½ yellow capsicum sliced
- 1 carrot sliced
- 1 zucchini sliced
- 200 g snow peas top and tailed and halved
- 100 g mung bean sprouts
- 2 garlic cloves sliced
- 2cm round of ginger peeled and chopped
- ½ tsp dashi powdered stock
- 2 tbsp ponzu sauce
Instructions
- In large wok pre-heat until almost smoking, add ginger and garlic, and rest of vegetables. Cook quickly, add dashi stock and ponzu sauce, toss and serve.
