Ingredients
  

  • 2 tbsp coconut oil
  • ½ red capsicum sliced
  • ½ yellow capsicum sliced
  • 1 carrot sliced
  • 1 zucchini sliced
  • 200 g snow peas top and tailed and halved
  • 100 g mung bean sprouts
  • 2 garlic cloves sliced
  • 2cm round of ginger peeled and chopped
  • ½ tsp dashi powdered stock
  • 2 tbsp ponzu sauce

Instructions
 

  • In large wok pre-heat until almost smoking, add ginger and garlic, and rest of vegetables. Cook quickly, add dashi stock and ponzu sauce, toss and serve.
