Warm Cabbage and Apple Salad

This AIP friendly Autumn warmer is quick & easy – simple enough to whip up just in case someone stops by announced!
In summer, fresh salads are a good way to mix and match greens with seasonal fruits, but now the weather is cooling down warm salads are quite comforting. A perfect way to sneak in a few more vegetables!

Ingredients
  

Salad

  • 2 tbsp Avocado oil
  • ¼ head Purple cabbage Shredded
  • 1 tsp Fresh ginger Grated
  • 1 Green apple Roughly chopped
  • 10-12 Raisins chopped
  • ½ tsp Sea salt

Dressing

  • 2 tbsp Apple cider vinegar
  • 1 tbsp Fresh Lemon juice
  • 1 tbsp Raw runny honey

Instructions
 

Dressing

  • Add all the dressing ingredients to a bowl or glass jar.
    Cover the jar and shake to mix. Keep aside.

Salad

  • Heat sauté pan. When hot, add avocado oil & cabbage, the ginger and sea salt. Stir to mix and cover and cook for 2 minutes.
  • Open lid, add the apple pieces and stir and cook for 1 more minute. Turn heat off. Add the raisins (optional).
  • Pour the dressing over the cabbage mixture and stir to mix everything well.
    Set aside for a few minutes to cool before serving.

Notes

You can add grilled meats or seafood to increase the protein to this delicious, warm Autumn salad. Enjoy!
